As a child, the word "beans" only meant three things to me: green beans-yucky, lima beans - even yuckier and baked beans - yummy! But now that it's my turn to put dinner on the table, I've learned a bit more about our legume friends. We are foes no more now that I understand both the health and financial benefits of adding them to our regular diet. Beans are effective in the fight against cancer, they are high in protein and fiber and they even help lower cholesterol. Beyond that, they are high in protein, beneficial to those with diabetes, and help lower cholesterol. Maybe they are the magical fruit. And they sure are cheaper than a cut of meat, even you buy them canned, which I do. Otherwise I always end up with indigestible crunch.
